This soup is hearty and comforting. It is made in a crockpot with tender turkey meatballs, vegetables, and flavorful broth that is cooked slowly.
Ingredients:
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can 14 oz diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, and minced garlic
Mix until well combined
Form mixture into small meatballs, about 1 inch in diameter
In a slow cooker, place chopped onion, carrot, and celery
Add diced tomatoes, chicken broth, dried oregano, and dried basil
Season with salt and pepper
Gently place meatballs into the slow cooker
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until meatballs are cooked through and vegetables are tender
Serve hot, garnished with grated Parmesan cheese
