Ingredients:
- 1 package 16-bean soup mix
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 1 ham hock
- 6 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Run cold water over the 16-bean soup mix and drain it
Boil the beans for a few hours, then add the chopped onion, carrots, celery, minced garlic, diced tomatoes, ham hock, chicken broth, bay leaves, dried thyme, dried oregano, salt, and pepper
Mix everything together well, then put the ham hock in the liquid and cover it
Cook on low for 8 to 10 hours, or until the beans are soft
Take out the ham hock, shred the meat, and add it back to the soup
If you need to, add more salt and pepper to taste
Throw away the bay leaves
Serve hot with fresh parsley chopped on top
