Ingredients:
- 2 chicken breasts
- 200g firm tofu, drained and crumbled
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
Set the oven's temperature to 375F 190C
Combine the crumbled tofu, dried oregano, minced garlic, chopped parsley, salt, and black pepper in a bowl
With caution not to cut through the whole chicken breast, cut a pocket in each one
Gently press the tofu mixture into each chicken breast to create a pocket, then stuff each breast
In a skillet that is ovensafe, warm the olive oil over medium-high heat
When the chicken breasts are browned, add them to the skillet and cook for two to three minutes on each side
Place the skillet in the oven that has been preheated, and bake for 20 to 25 minutes, or until the chicken is thoroughly cooked
Before serving, take it out of the oven and give it some time to rest
After slicing, serve with your preferred side dishes
