Ingredients:

  • 3 premium buffalo burger patties
  • 3 burger buns
  • 3 slices cheddar cheese
  • 1 red onion, thinly sliced
  • 1 tomato, sliced
  • Lettuce leaves
  • Pickles
  • Mayonnaise
  • Mustard
  • Salt and pepper to taste

Instructions:

Set your grill or pan on medium-high heat to get it ready

On both sides, season the buffalo patties with salt and pepper

For medium-rare, or until done to your liking, cook patties on the grill or in a skillet for about 4 to 5 minutes on each side

Add a slice of cheddar cheese to each patty and let it melt in the last minute of cooking

Lightly toast the burger buns on the grill or in a pan

Put mustard on the top half of each bun and mayonnaise on the bottom half

Put lettuce leaves on the bottom bun of each burger, then a buffalo patty with melted cheese, sliced tomato, red onion, and pickles

Add the other half of the bun on top, and if you need to, use a toothpick to hold it in place

Instructions:

Once the water is boiling, reduce the heat to low and let the eggs simmer for 4-5 minutes for a runny yolk or 7-8 minutes for a slightly firmer yolk

While the eggs are simmering, prepare a bowl of ice water

After the desired cooking time, use a slotted spoon to carefully transfer the eggs to the bowl of ice water to cool rapidly and stop the cooking process

Let the eggs sit in the ice water for about 2 minutes to ensure they are fully cooled

Gently tap the eggs on a hard surface to crack the shell, then peel and serve

Instructions:

Combine the crumbled tofu, dried oregano, minced garlic, chopped parsley, salt, and black pepper in a bowl

With caution not to cut through the whole chicken breast, cut a pocket in each one

Gently press the tofu mixture into each chicken breast to create a pocket, then stuff each breast

In a skillet that is ovensafe, warm the olive oil over medium-high heat

When the chicken breasts are browned, add them to the skillet and cook for two to three minutes on each side

Place the skillet in the oven that has been preheated, and bake for 20 to 25 minutes, or until the chicken is thoroughly cooked

Before serving, take it out of the oven and give it some time to rest

After slicing, serve with your preferred side dishes

  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish optional

Instructions:

Heat the olive oil in a big skillet over medium heat

Cook the diced chicken for 5 to 7 minutes, or until it is browned and cooked through

Take out and set aside the chicken from the skillet

Add the minced garlic, bell pepper, and diced onion to the same skillet

Simmer the veggies for 5 minutes or until they are soft

Add the raw rice, chopped tomatoes along with their juices, chicken broth, cumin, chili powder, cayenne pepper, salt, and pepper

After bringing the mixture to a boil, lower the heat to a simmer, cover it, and cook the rice for 20 to 25 minutes, or until the liquid has been absorbed

When the rice is done, add the cooked chicken back to the skillet and mix everything together

If preferred, garnish with fresh cilantro just before serving

Bake for 20-25 minutes, stirring halfway through, until the mixture is golden brown and toasted

Remove from the oven and let cool completely before transferring to an airtight container for storage

  • 6 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme

Instructions:

Run cold water over the 16-bean soup mix and drain it
